MEXICAN CHICKEN RICE
INGREDIENTS [ 16 ]
Seasoning
add the cayenne, salt, pepper, paprika, garlic powder, cumin and oregano, give this a mix. Take out 2 tbsp of the mix and leave this separately. in the main mix add 1 whole lime and 50ml olive oil, mix until seasoning looks liquid. (add more olive oil if needed) Then add the chicken thighs and mix.
Cooking
big pot on medium heat, add the olive oil and cook the chicken skin side for 5min then flip for 3min. Once cooked take out the chicken and leave it aside.
in the same pot, add the onion, red peppers and garlic. Cook for 2 minutes.
using the rice bowl, add 2 chicken stock cubes and fill 90% of the bowl with water and mix.
add the rice and mix for about 1 minute.
pour in the chicken broth, canned tomato and the separated seasoning Mix and cook for about 2minutes. Add the chicken back and close the lid for 30minutes. Done
