Sushi Rice
Mirin
Sugar

Rice

Sushi rice to water ratio is 1:1, very important.

Wash your sushi rice till the water is clear

Drain your sushi rice as much as possible.

Then add 1:1 ratio of water to the rice and let the water soak into the rice for 15 minutes before cooking.

Sauce

In a pot add x amount of mirin and sugar and cook on medium heat for 5 minutes to create the sushi syrup. Usually 10tbsp of mirin and 2tbsp of sugar is a good ratio.

add the syrup to the sushi rice once cooked and mix it in.
